Ardbeg Corryvreckan
Corryvreckan takes its name from the famous whirlpool that lies to the north of Islay, where only the bravest souls dare to venture. Swirling aromas and torrents of deep, peaty, peppery taste lurk beneath the surface of this beautifully balanced dram. Like the whirlpool itself, Corryvreckan is not for the faint-hearted! Heady, intense and powerful. Taste; deep, peppery and chewy, bombarding the tongue with its intense tastes and textures. Ardbeg Twenty One
Ardbeg Twenty One, as the story goes, is a 21-year-old bottling which was distilled back in the mid-1990s. At that time the Islay distillery was on life support, with its “whitewashed walls … faded and crumbling” and distilling there almost non-existent. It is said a then-young Mickey Heads, now distillery manager, “set aside a small number of casks for Ardbeg’s future – including some containing whisky distilled during those perilous days when the Distillery’s future was still uncertain.”
Colour: Old gold
Nose: as expected with an older whisky, the peat isn’t as pronounced. Very coastal at first, with salt-spray and lemon juice. Once that settles there’s a beautiful sweet peat note mixing with the vanilla from the American oak. Smoked salmon. Sage. Assam tea. Burnt bacon. For me this feels like a classic Ardbeg nose (classic in an E-Type Jag kind of way).
In the mouth: unexpectedly clean for an Ardbeg (this is not Corryvreckan or Uigeadail), with a lightly cloying texture. Smoked salmon again. The peat is gentle but there’s plenty of peppery warmth – either from the peat or the wood, it’s quite tightly bound together. Very mossy and herbal: sage and thyme. Hemp. Vanilla returns, perhaps with a touch of floral honey combined. Tinned tomatoes. The pepper returns on a lingering finish.

Finish: Smoky and long. Sea spray, dry grass, a touch of ash and citrus.

Bunnahabhain 12yr
$18
Bunnahabhain Limited Edition 40 Year Old
Quietly, hidden for over 40 years within the prestigious Bunnahabhain distillery on Scottish island Islay’s northern shore, a long-forgotten maturation continued to develop. When reviewing ledgers dating back decades, master distiller Ian MacMillan uncovered a missing series of Turney casks considered by some to be the finest oak casks ever made. Much to his surprise, the casks were filled with maturing malt whisky. This significant discovery has led to Bunnahabhain’s latest release, a one-off rare single malt that will delight not only fans of the 130-year-old distillery, but scotch drinkers everywhere. This run is limited to only 750 bottles globally, with 212 in the US. Coppery gold in color, the “40 Year old Islay” carries a rich complexity, with honey and ginger, spicy and nutty notes, and even a hint of sea salt. Lingering citrus and a tropical fruit bouquet leave a vibrant finish, with the latter pertaining to its time spent in the sherry wine oak casks. Unlike other distilleries in Islay that focus on peatiness, Bunnahabhain embraces a less-smokey taste.

$16
Laphroaig 18 Year Old
Bright gold in colour. At bottling strength, on the nose there is a soft toffee sweet but faintly spicy flavour counterbalanced by the trace of delicate phenols and fruit. An all-encompassing smoothness brings these together. A touch of water allows the seaweed and salt to come through but not enough to overpower the vanilla and honey sweetness with just a trace of new mown hay and peat at the finish. The body has an intense depth that is exceptionally balanced and warming. On the palate, an instant warming tang of smoke fades into smooth floral scents, which blends seamlessly into an oaky nuttiness and leaves a lasting sweetness on the taste. With a touch of water, the peaty warmth fills the mouth but does not overshadow the sweet chocolate smoothness. This is balanced by the rich toffee taste and slowly fades into a delicate hint of heather and peat smoke. The finish is full bodied, long with a luxurious oily smoothness.
$26
Laphroaig 25 Year Old
The flavors evolve on the nose and palate, with peat kiln smoke, fresh asphalt, damp earth warehouses, morning after campfire ash, and old boat dock contrasting nicely with toffee apple, crème caramel, delicate raspberry preserve and dried citrus. $180
Laphroaig Quarter Cask
In the early days of the 19th century whisky was often transported by mule or packhorse. The whisky would be placed into small ‘quarter casks’ and await collection. Complete maturation would then take place in these tiny barrels. Pure gold in color the nose is smokey and stingy with lots of salt, peat, earth and iodine. A full peat and smoke taste develops into a long smoky burn. This is about a smoky as it gets!

Highland Park Ice Edition
According to legend, the ice realm, Niflheim, is the homeplace of darkness, cold, ice and frost. The first Ice Giant, Ymir, was born at the beginning of time when the edge of the realm melted from the heat of the neighbouring fire realm, Muspelheim, and he is the first creature mentioned in Norse creation mythology.
As Ymir slept, he gave birth to the Jotun family, a race of powerful Ice Giants standing at over 20 feet high and known as the Gods of Creation. When they shook, fought or sneezed, it caused earthquakes!
This 17 year old single malt has the classic Highland Park flavour dynamic, similar to Freya in the Valhalla Series.
A radiant whisky, natural in colour with mirror-like brightness. Up-front, vivid aromas of cool, fresh pineapple and mango sorbet give way to silvery shards of smoke and the frosty kick of root ginger. Like the Ice Giants themselves, the palate is powerful yet smooth, misty peat smoked inter-twined with vanilla seeds. A beautifully balanced finish, with lingering woodiness and spices.

Balvenie 40 Year Old
The Balvenie’s first 40-year-old was released in 2010 but was not exported to the United States; it was only available
in a few select duty-free shops in various parts of the world. Our bottle is one of 50 allotted to America and one of only
150 hand-numbered bottles released world-wide. We are told this treasure was worth the search, as the Balvenie’s
malt master, David Stewart, has achieved a gently refined complexity by combining the contents of three American-oak
refill hogsheads and three European-oak sherry butts. They say that although it is not as heavily sherried as Batch One,
the sherry-like characteristics of this 97-proof whisky still predominate over the candied smoothness of its delicate
essences of violet petals, cedar, and buttered toffee. Each bottle comes in an oak presentation case handmade by
Scottish craftsman Sam Chinnery and hand-engraved by his father, John.

This 40 Year Old is not only precious but also pioneering. Glenfiddichs’ Malt Master carefully hand selects individual
casks before marrying them together with what was left over from the previous 40 Year Old vatting. This continuous
process is known as ‘remnant vatting’ and contains whiskies that are at the very least, 40 years old. They are the only
single malt Scotch whisky in the industry to use remnant vatting. As a result, its uniquely rich and deep flavour was
voted the ‘Best of the Best’ single malt by Whisky Magazine in 2003, collected the Trophy at both the ISC and the
IWSC in 2008(the first time any whisky has won both in the same year) and Best Single Malt at the ISC in 2010. The
nose is beautifully rich and aromatic with layer upon layer of dried fruits, dark chocolate, roasted coffee and ripe black
cherries. Occasional wafts of gentle wood smoke, polished leather and cloves. The taste is silky smooth and luxuriously
mouth coating. The initial flavours are intense dried fruits, Christmas cake, dates, raisins and stewed apples. Over time

Macallan 12 Year Double Cask
The Macallan’s double oak casks are the single greatest contributor to the outstanding quality, natural colours and distinctive aromas and flavours of The Macallan. In fact 60% of the flavour of a whisky is derived from the cask it is matured in. Because of this, The Macallan spends more per cask than any other distillery in sourcing, crafting, seasoning and caring for its casks. Spanish sherry seasoned oak casks deliver flavours and aromas of chocolate orange, dried fruits and spices; American sherry seasoned oak casks primarily provide sweet citrus, light spice, vanilla and light oak flavours and aromas; American bourbon seasoned oak barrels give flavours and aromas of sweet citrus, coconut and oak.

Macallan Rare Cask
Nose: Malt, sherried sweetness, dried dark fruit and a cocoa powder move through first followed by lighter notes of caramel butterscotch, candied citrus and spice. There is an oily character to the nose that’s throwing me off a bit and the best I can describe it as is a dark fruity oil.
Palate: Darkly sweet and layered with notes of dried fruit, caramel, iodine, butterscotch, sherry sweetness, overripe bananas and cocoa powder.
Finish: Long, darkly sweet and oily with notes of overripe fruit and sweet maltiness. The fade becomes a bit cloying after about a minute.
