Connemara Peated Single Malt 12 Year
On the nose, Connemara has an initial smokiness with an underlying sweetness. It could be accurately described as smelling as if a toffee shop had burned down. Creosote, sugar, and hints of chocolate abound. The palate offers up flavors reminiscent of a forest fire, with the creosote flavor continuing as well as a slightly medicinal note balanced with soft caramels and sticky buns. The finish is peaty, lingering and almost mysterious, with rich chocolate pot de creme notes at the end.

Jameson Black Barrel Select Reserve
Nose: Rich and fruity with notes of tropical fruits, coconut, nectarines in yoghurt, guava and a thick core of sweet cereals.
Palate: Thick and full on the palate, with an intense, unctuous creaminess, alongside dates, walnuts and peels. Good peach and coconut notes, and a little cinnamon.
Finish: Long finish, and very fruity with notes of cinnamon and nutmeg and hints of potpourri.

Jameson Caskmates
Nose: There's still cut grass and some fruit alongside delicious oily pot still character, but things are different here too. Is it a different sweetness perhaps, more wood spice plus chocolate liqueur. A shift of emphasis.
Palate: Orchard fruits, great mouthfeel but the vanilla cream is less prominent, it's more fragrant (hoppy?) and floral on the palate with a touch of bitterness.
Finish: Again familiar, but different, that different complexion of spice with chocolate from the nose lingers briefly.

Knappogue Castle 14 Year Old Twin Wood
This Irish single malt derives its Twin Wood name from the fact that it combines whiskey aged in two types of wood: Oloroso Sherry casks and bourbon barrels. It spends a minimum of 14 years in bourbon barrels and then it is combined with more Irish single malt aged in casks specially infused with Oloroso Sherry. Straw-hued gold in color, the aroma is of vanilla, coconut and barley. On the palate green apples, pears and citrus with vanilla and caramel. Spice notes and honey come through toward the end, and it finishes smooth and dry.

Knappogue Castle 16 Year Single Malt
Aged for 16 years with a sherry cask finish, this numbered bottle was distilled in 1994 and bottled in 2010. It has an intense aromatics that range from malty and fruity to dusty dark chocolate. The flavors are deep and complex with a pleasant woodiness and has some sweetness and dark chocolate lingering on the finish.

Knappogue Castle 1951
The 1951 Knappogue Castle now has a legendary status amongst Irish whiskeys. The old Tullamore Distillery closed permanently in 1954 yet some casks were liberated by various entrepreneurs for maturation. Mark Edwin Andrews was one of these people having returned to the land of his ancestors from America to live in Knappogue Castle in County Clare. He managed to source a number of casks from different vintages, most of these were given away as gifts or were used for personal consumption. After 36 years in casks he released the 1951 commercially in 1987. To this day the 1951 vintage of Knappogue Castle is still regarded as one of the finest whiskeys ever made, it is by no means perfect but its imperfections are what makes it so interesting! Old whiskeys can be an acquired taste and are not for everyone, expect to find lots of oak and spice flavours with this.

Powers John's Lane Release
James Power founded his distillery at Thomas St. in 1791 moving shortly thereafter to a larger site at John’s Lane near the western gate of Dublin. This whiskey is true to the original style of John’s Lane which used a pot still distillate. The whiskey has been matured for not less than 12 years, mainly in first fill American bourbon casks, with a small contribution of distillate which has been matured in Oloroso sherry butts. On the nose there is an abundance of earthy aromas, leather and tobacco with layers of charred wood, dark chocolate and treacle toffee. Full bodied spice front followed by vanilla, honey and dried apricot with a lingering honey sweetness on toasted oak finish.

Redbreast 15 Year Old
Redbreast is a very special unblended whiskey, triple distilled and made with malted and un-malted barley. The Redbreast brand and specifically Redbreast 12 Year Old, was first launched in 1939 as the brand name given to the pot still whiskey supplied by Jameson to whiskey bonders before bottling at the distillery became the norm in 1968. Stocks of whiskey in bonders’ stores petered out, and thus Redbreast all but disappeared until Redbreast 12 Year Old was re-launched by the distillery in the 1990s as a single pot still whiskey. Redbreast 15 Year Old pure pot still whiskey, the latest addition to the family, is distilled from malted and un-malted barley in traditional copper pot stills and matured for a minimum of 15 years in a combination of old Spanish Oloroso sherry casks and fresh American bourbon whisky barrels.

Non-chill filtered with the oldest whiskey in the blend at 5 years old. On the nose is warm, deep and buttery, if not overly complex. Banana malt, hay, dried orchard fruit, honey and a touch of oak. On the palate it has honied orchard fruit, banana chips, hay like malt Cornpops, vanilla and caramel. The finish is medium to long with more of that honey, dried fruit, malt, vanilla and orange candy. A well balanced drop with a medium body and soft, buttery feel.

West Cork Irish Whiskey
A standard blend of grain and malt whiskeys, aged in Bourbon barrels. It's a light and breezy blend, largely in keeping with the gently "house style" of Irish whiskey. There's a citrus edge on the nose, but the body features plenty of malt, with solid nougat, vanilla, and a mild echo of citrus - lemon meringue, perhaps - as the finish takes hold. It's a whiskey that initially comes across as simple but which grows on you quite a bit as you work through that first glass.
